A short writing exercise required us to recall Things I have Broken, and this a what I wrote:
Cows eyes, mati sapa, that’s what they are called in Indonesia. You take one, fresh and firm, and CRACK it on the side of the pan. Drop the insides in and watch the translucent fluid spread and miraculously turn white. That leaves the bulging yellow eyeball staring up at you out of the fat. Crack and add another. Then there are two looking disapprovingly as their whites coalesce and bubble. Soon they are ready to serve out onto a pile of fried rice or nasi goreng turning it into special fried rice. And forking into your istimewa, with the yolk merging into the deliciousness, it does truly seem special.
